PH: JASON JOBSONWith one of the hottest Summers on record, everyone appreciates a light and tasty treat that can fill you up and not weigh you down.  Try this delicious salad suggestion when entertaining a group, or for just that special someone.   Don't hesitate to save the leftovers - as this will also make the perfect afternoon pick-me-up at the office next week!  Grilled Shrimp spiced to taste (these were sizzling with a little cayenne and rosemary), Arugula lettuce for the perfect tangey quality, Tuscan white beans, roasted Pine Nuts, Cherry Tomatoes, and freshly shaved Parmesan cheese.  Drizzle with Olive Oil and Salt & Pepper to taste.  The best part is you can substitute any or all ingrediants (scallops for shrimp, spinach for arugula-etc.) for your own favorites -

I guarantee your guests will love it - and be talking about long after Labor Day!
